RECIPE: French Toast with Berries
What is better on a cold weekend morning than a warm plate of French toast?
A berry loaded dish of French Toast!
Made with eggs, milk and bread, French toast is one of the most inexpensive and easiest breakfast treats you can make. It’s a great way to use up bread that has gone stale and if you have more than you need, simply refrigerate it for up to two days and microwave when ready to eat.
You can top French toast with anything you like from cheese or peanut butter to sweet syrups or fruit. Just about anything your taste buds desire will be great on this dish. But for sure, nothing can’t beat your favorite combination of fresh berries!
Slice into strips and it’ll become a great afternoon snack for kids.
Classic French Toast with Fresh Mixed Berries
Prep time: 10 minutes
Cook time: 20 minutes
Serves: 4
Ingredients:
1 c. fresh blackberries
1 c. fresh raspberries
1 lime, juice and zest, preferably organic
¼ powdered sugar
3 large eggs
2 t. vanilla extract
½ c. whole milk
½ t. ground cinnamon
¼ t. ground nutmeg
8 slices sourdough bread, slightly hardened*
*To harden, leave the sliced bread on the counter for several hours to overnight or place on a baking sheet in a warm (lowest setting) oven for 5-10 minutes.
To serve: Additional powdered sugar and/or real maple syrup. If desired, offer bacon or sausage links on the side.
Directions:
Combine the fresh berries, lime juice, lime zest, and powdered sugar in a large bowl and gently toss to combine. Set aside.
Add the eggs, vanilla extract, milk, cinnamon, and nutmeg to a medium bowl and stir to combine.
Soak the prepared bread in the egg mixture for 4-5 seconds per side, then transfer to a rimmed bowl. Set aside.
Heat a large non-stick skillet over medium heat. Add two or three slices of the soaked bread to the hot skillet and cook for 3-4 minutes per side, or until golden brown on each side. Remove from skillet and repeat this process with the remaining bread slices.
To serve, transfer the French toast onto individual plates and top with some of the fresh berry mixture and some powdered sugar and/or real maple syrup. Offer some crispy bacon or sausage links on the side, if desired.
